8. Steve Smith Sr., WR (1999-2000)
If not for tacos, burritos, and quesadillas, Smith might not have landed in Salt Lake City.
While working at his off-campus junior college Taco Bell job, Smith met Fred Graves, then Utah’s receivers coach, and a friendship blossomed.
Smith ranks 21st in receiving yards (1,603) and receiving grabs (12) in Utah annals — keep in mind he only spent two years with the program. Against San Diego State in 2000, he had a ridiculous stat line — two catches, 143 receiving yards, and two scores.
