7. Shaquem Griffin, LB (2013-17)
Griffin had a fantastic story, playing with only one hand, but he was a great football player nonetheless. The linebacker was one of the best players on the best team in program history. UCF went 13-0 in 2017 and Griffin had three-and-a-half tackles for loss in its Peach Bowl victory against Auburn. Griffin also won AAC Defensive Player of the Year in 2016.
